Appetiser Cheesecake

We had another Ridiculous to  Sublime Dinner Party last weekend.  Twelve friends from our business/education group came to celebrate and get to know each other better.  We started off with Appetizer Cheesecake during attitude adjustment hour and played this game…   The winner donated her proceeds to Village for Vets .  Founded by Auntie Marcie in 2016, Village for Vets serves the most vulnerable Veterans by mobilizing the power of community volunteers and the generosity of donors.

 Preheat oven to 300°

 ¼ c. grated parmesan

⅓ c. fine bread crumbs   

3 - 8 oz. pkgs. cream cheese brought to room temperature  

1 T. cream               

4 large eggs

4 oz. bleu cheese

4 oz. goat cheese

½ c. cream

½ lb. bacon

1 medium onion

1 t salt

1 t pepper


1 T. each minced parsley and chives 

Combine bread crumbs and parmesan cheese and put into bottom of a watertight 8-inch springform pan.

Sauté bacon (don’t burn) and chop.

Sauté onion in the bacon drippings and let cool.

Combine cream cheese, eggs and cream. 

Add cooled onions, and other cheeses, salt if needed, pepper and combine.  Pour into springform pan.  Set in larger pan.  Pour boiling water into larger pan 2 inches deep.  Bake 1 hour 40 minutes at 300°.  Turn off oven and let set for 1 hour.  Cool 2 hours.  Garnish with chopped greens.
