Banana Date Nut Bread So Seriously Delicious – even Dave loves it and does not even know it is Gluten Free…

Grease loaf pan and line with parchment paper

2 Ripe Bananas
1 cup pitted dates
Whirl in Food Processor with ¼ cup water
1 ¾ c. Almond Flour
½ c. Tapioca Flour
¼ c. Arrowroot
¼ c. Buckwheat Flour
½ c. chopped mixed nuts of your choice
2 T. ground Flax seeds
2 t. cinnamon
1 t. baking powder
1 t. baking soda
¼ t. salt

Mix all dry ingredients together in a bowl.

4 eggs separated
¼ c. butter softened
2 t. vanilla
1 T. Maple Syrup (optional)

Mix yolks, butter, syrup and vanilla together, then mix into mashed fruit.  Gently add the dry ingredients into the wet.   Beat the egg whites until soft peaks form.  Gently fold into the batter.
Pour mixture into the loaf pan and bake 50 minutes.  Cool 15 minutes.  Run knife around edges and remove to serving plate.  Can be eaten warm or cool.  Flavor is spectacular.
